I spend a lot of time with Fujian people. I have tried a lot of dishes made by them. They use a lot of tofu in their dishes. What other dishes do they serve?

Fujian food or "Min Cai" is also one of the renowned "Eight Cuisines" in China. It's particularly famous for its great variety of soups and the locally made wonton and meatballs which offer a rare treat. Personally, I recommend you try "fó tiào qiáng," or "Buddha Jumps Over the Wall." Swimming in the deeps of its tasty broth, you'll find shark fin, quail eggs, scallops, sea cucumber, abalone, chicken, Jinhua ham and pork tendon all complimented by bamboo shoots, ginseng, mushrooms and taro.
